Faced with a fridgeful of whole foods in my post-Pollan kitchen, I set out to discover what on earth to do with them.
If you can find Luther Burbank Spineless nopales, they are the ones to use. Cactus pads can sometimes get a little slimy when cut...if they are and it bothers you, just rinse them well after you've sliced them (you can even rub them a bit with your fingers, like you're trying to rinse soap off something) and then lay them out on paper towels to dry.
This looks fantastic. I've never had nopales but anything with avocado is right up my alley.
